I did strawberries and blueberries • Optional: maple syrup or honey to sweeten if you want! ➡️INGREDIENTS: 4 eggs, 200g cottage cheese, 1 small zucchini, 1 large tomato, salt and pepper to taste, 2 tbsp olive oil, 4 tbsp grated cheese, 1 tbsp fresh parsley ➡️PREPARATION: Preheat the oven to 180°C and prepare a heatproof dish. Dice the zucchini, lightly salt, set aside for a moment, and drain excess water. Dice the tomato and also drain excess water. In the heatproof dish, crack the eggs, add cottage cheese, vegetables, salt, pepper, olive oil. Mix everything thoroughly. Sprinkle the entire mixture with grated cheese. Place the dish in the preheated oven and bake for about 35-40 minutes until the bake turns a dark golden color. Remove from the oven, wait a moment for it to cool slightly. Shamelessly jumping on the Custard Yogurt Toast here! It’s super simple and really quite tasty! I used brioche bread, not because I was trying to be boujee it’s just what I had in the freezer! You’ll need; • Half a cup of yogurt • 1 egg • Pinch of cinnamon • 1 tbsp maple syrup • 1/2 tsp vanilla • Fruit of choice • In my case the mixture covered 3 slices of brioche but if you use regular bread 2 slices should do it. Mix together the yogurt, egg, cinnamon, vanilla and maple syrup. Using the back of a spoon make an indentation in the bread, spoon on the yogurt and top with fruit. Strawberry Oats with a chocolate shell 🍓🍫
For the Blended Strawberry Oats 1 cup (90 grams) rolled oats 1/4 cup (60 ml) milk of choice 1/2 cup (80 grams) fresh strawberries 1/2 cup (110g) thick natural yogurt or greek yogurt 2 tsp vanilla extract 1-2 tsp maple syrup (or sweetener of choice) optional 1 pinch salt Chocolate Shell 1/3 cup (60g) dark chocolate use vegan if necessary 1-2 tbsp coconut oil optional (helps to thin the chocolate)Pour over the blended oats and smooth out so it covers the top. Place in the fridge to set for 2-3 hours (or overnight). Enjoy!
