Best healthy vegan chocolate cake ever! I blended in my blendtec 2 bananas, 1tsp vanilla extract, 1/2 cup coconut milk, 2 cups cooked and cooled red quinoa and 1/2 cup melted and cooled coconut oil... Mix and add to dry ingredients of 1 1/2 cup coconut palm sugar, 1/2 cup cacao (I used a combo of cacao and maca), 1 tbsp baking powder and 1/2 tsp Himalayan salt. Bake at 350 for 50 minutes.
