RAMEN creamy coconut noodles w/ umami shredded tofu mince 🍜
Ingredients (serves 2) For the broth 1 tbsp sesame oil 4 spring onions, chopped 1 tbsp chopped coriander stalks 2 cloves garlic, minced 1 inch ginger, minced 1.5 tbsp white miso paste 1 tbsp light soy sauce 1 vegan chicken stock cube 6 dried shittake mushrooms 400-600ml water (depending on how brothy you like it) 1/2 tin coconut milk Juice of 1 lime . For the tofu 200g extra firm tofu 1 tbsp dark soy sauce 1 tbsp sesame oil 1.5 tsp agave . To serve 200g dry noodles, cooked to package instructions Pak choi Fresh coriander Extra fresh lime Chilli oil . . tik tok: ellysplate

Lemon Courgette Udon
Olive Oil ½ Courgette ½ Leak 3 Cloves Garlic, Roughy Chopped 1 Tsp Black Pepper ½ Lemon 200ml Coconut Milk 1 Tbsp Miso Paste 2 Tbsp Soy Sauce 400g Udon 1 Spring Onion Chop the leek in half and then thinly slice. Grate the courgette. Add a large glug of oil to a wok and add the leek and courgette with a big pinch of salt. Cook on a medium heat for 10 mins until cooked down and caramlised. Meanwhile combine the coconut milk, miso paste and soy sauce. Add in the garlic and black pepper and cook for 2 mins. Add in the coconut milk and mix well. Add in the udon, pop a lid on and turn the heat to low. Allow to cook for 5 mins or until the udon is softened and you can mix it all together. Finally add the zest and juice of half a lemon, sprinkle with spring onions and enjoy.

-3 minced garlic cloves -1/4 inch minced ginger -1 medium spiced chilli -1 diced carrot -1/4 diced white cabbage -1 block firm tofu -2 tbsp soy sauce -2 tbsp sriracha -3 spring onion -rice paper sheets -cornflour slurry (stir in a few tbsp of cornflour to your water) ⭐️ METHOD ⭐️ -start by frying the garlic, ginger and chilli until soft then add the carrot, cabbage and tofu then fry for another few minutes -now add the soy sauce and sriracha then fry for another few minutes before stirring in the spring onion and leaving then leaving the mixture to cool down. -now dip your rice paper sheet into your cornflour/water mix then place a big spoonful of filling in the centre and fold into a square (see video). -wrap the dumpling with another dipped rice paper sheet so they don’
