I think it's worth discussing a nanny-cam and the sitter's feelings about that, and asking whether the sitter is comfortable expressing him/herself if there are issues either with the parents or the children. (As a nanny, I really loathe nanny-cams, because I think they're unnecessary and an impediment to trusting one another completely, but it's good to know how a potential nanny feels about them.)
