You don't have to eat lentils only as a soup. The weather gets warmer, so try a cold lentil salad! Combine lentils, chopped tomatoes and lettuce, crumbled feta cheese and fresh oregano in a salad bowl; drizzle with a simple mustard dressing, (mustard, extra virgin olive oil, raw filtered apple cider vinegar, Himalayan sea salt and freshly ground black pepper) and gently toss to combine.
