Basil Quinoa Cakes
BASIL QUINOA CAKES 2 1/2 cups cooked quinoa 4 eggs, beaten 1/2 teaspoons sea salt 1/4 cup chopped fresh basil 1 small white or yellow onion, finely chopped 1/3 cup parmesan cheese, grated 3 cloves garlic, finely chopped 1 cup bread crumbs (plus a few extra tablespoons if needed) 1-3 tablespoons olive oil
Wheat-free quinoa pancakes. I used ground flax instead of the rice flour, added a banana instead of the sugar, used coconut oil for the oil, almond milk (because we're almost out of regular milk), and processed it all in the blender so there'd be less quinoa crunch in the pancakes. They're different than normal pancakes, but we liked them.
