Tencha 碾茶. Literally Ground #Tea, tencha refers to tea leaves that are ready to be made into #matcha. Like gyokuro, the tea plants used for making tencha are shaded for 3 weeks before being harvested. Tencha starts out as unrolled aracha that is then sorted to remove the veins and stems. The sorting process is usually done using air, as veins and stems are heavier than other leaf particles and can be easily separated out. From my forthcoming book on tea, link in profile.
