My rhubarb plant is growing like crazy now, so I decided that it was safe to use the rest of last year's frozen harvest. This is my favorite pie, and I've made it several times. The only thing I'd add is that it makes enough filling for a deep dish pie, so if you're using a shallow pie shell, cut it in half, or better yet, make two!
