One pot shrimp pasta

Serving Size: 4 servings
One pot shrimp pasta
  • 1 box rotini pasta (or other short cut pasta)
  • 1 lb thawed, cleaned shrimp
  • 1/2 cup frozen peas
  • 1 onion chopped
  • 2 tbsp olive oil
  • 1 Clove garlic minced
  • 28 Oz can diced tomatoes
  • 3 cups Chicken broth
  • 1/2 heavy cream
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups spinach
  • 1/2 cup shredded Parmesan cheese
Fresh parsley and basil for serving
    Sautée the diced onion in the oil until soft, add salt and pepper and garlic and sautée 1 minute
    • Add the pasta, peas, tomatoes, cream and enough chicken broth to fully cover the pasta.
    • Cover and Cook on high 5 minutes.
    • Add in the shrimp and spinach, cover and cook on high another 5 minutes or until the shrimp is cook through.
    • Add in the cheese and parsley and basil, stir to melt the cheese
