Zucchini and Summer Squash Casserole - we had this for supper tonight .  I added some grated Parmesan cheese, then the cheddar cheese.  It did take longer to cook than the recipe states (potatoes were underdone at stated time). . but oh was this YUMMY!

Marinated Grilled Vegetables - zucchini, squash, mushrooms, tomatoes, red bell pepper, yellow bell pepper and red onion marinated in olive oil, soy sauce, lemon juice and garlic. Marinate veggies for 30 minutes and grill. Ready in about 15 minutes! SO easy and SO delicious! Everyone loves these vegetables! Use leftovers in a quiche.

Cut 1 large Zucchini, 2 Yellow Squash, 6 Red Potatoes & 1 Onion...Place in glass pan for baking dish drizzle with extra virgin olive oil garlic & herb seasoning, seasoned salt and bake on 350 for 45 minutes or until tops are golden brown.

Tomato, Squash & Feta Gratin -love having a different recipe for squash and zucchini.  Great for company because it adds so much color.  Would double the feta next time to 4 oz.
