Homemade Icelandic Skyr. I have such fond memories of having this for breakfast when I visited Iceland as an undergrad... We stayed with families for 4 or 5 days and had this every morning. Excited to find a blog post on how to try it at home.
Pönnukökur - These Icelandic crepe-like pancakes hold to the motto, 'You can never be too rich or too thin.' Wonderful texture and taste, tasty warm or cool. Even the fact that there is sour cream in it gives this pancake-like breakfast meal no odd taste. Fill each ponnukokur with brown sugar and icing sugar, and roll up.
Icelandic lamb soup. This I am going to do it for lunches at work. Me and Vital enjoyed at the cafeteria near Gulfoss waterfalls in Iceland, and it was soooo good. The right food for the right country and the right weather.
