Egg baked in Avocado. Oh my GOD. (From yaydiy.com)  (Preheat your oven to 425. Slice avocado in half lengthwise and remove the pit. Using a small spoon, gently scoop out a deep hole in both halves. You may have to go almost to the avocado skin. This is okay. Crack an egg directly into the whole on each half. Carefully place each avocado half in a cast iron skillet (or a lightly greased regular skillet) and place inside the oven. Bake until cooked through.
