Frozen Whipped Cream Dollops - put them in your coffee or hot chocolate! With mixer on medium speed, beat 2 c. heavy cream into soft peaks. Add 2 Tbsp. confectioners' sugar and 1 tsp. vanilla extract, and beat until stiff peaks form. Transfer to piping bag with star tip. Squeeze dollops onto parchment-lined cookie sheet, then freeze for three hours. You can keep in freezer for up to a month in an airtight container.
