Sourdough Cross tutorial! *For the full recipe including baking instructions, and sourdough supplies, check the links in my bio. *I like to freeze my loaf for at least a half hour before baking. I find that this helps with steam in the Dutch oven, and makes it easier to score. *Remove loaf from freezer and cover with a layer of rice flour. *I find it easier to outline the design first with a toothpick, and I can also fix it easier this way before I start scoring with my bread lame.

I typically refrigerate my dough overnight. 💛 You’re not replacing your blade enough. I use my blade only for 4-6 loaves and then replace it. This design is a variation of my ‘Zenith’ design which features a large central wheat stalk. The difference is that only the stalk is dusted in rice flour to accentuate it. It also means you get to see the lovely blisters and glossy crust shine through on the sides of the loaf. I wasn’t sure what to score yesterday and it was late so i decided to do a @sourdough_enzo inspired score I tried to incorporate some sweeping wheat stalks, and scissor work details on the ear and the back of the loaf.
