Ingredients:  Ready rolled puff pastry  600-700g sausage meat (depending how thing you want it) Zest of half a lemon 1-2 tbsp fresh chopped thyme Salt and pepper to taste   Make sure once the meat is in the pastry and sealed that it goes in the fridge for 3-4 hours or overnight, portion when it’s cold to make it easier.   Brush with egg wash before it’s cooked, so twice in total.
