You need to stop being shy with that bread lame. 👀🔪 Here’s my double score method for getting that pro-level ear and belly: 1️⃣ First score: One long expansion score, about ½ inch deep. Be quick and confident—don’t let that blade drag! ⚡️ 2️⃣ Second score: Go right back over the same line, but this time at an angle, just skimming the surface to create a little flap. That’s what helps that ear pop in the oven. 🍞🔥 Now, a perfect ear isn’t just about scoring—there are lots of factors at play—but mastering this will definitely level up your loaf. It’s as simple as grabbing the sides, pulling up, giving the top a squeeze, and repeating around the dough. 🔄 Rotate, repeat, and voilà – you’ve got a nicely shaped loaf. 🍞 2️⃣ Creating surface tension: Think of this as giving your dough a lil’ workout 💪. With one hand guiding the dough in a counterclockwise circle, use your pinky on the other hand to press in gently 👉. This builds the tension your loaf needs to spring up like a champ in the oven. 🔥 It’s not complicated, but it is a game-changer. Watch the video, give it a try, and let me know how it goes.
