Green Monster Veggie Muffin- I used honey instead of sugar. I think I would decrease to 2 Tbs next time and maybe add a bit more spinach. Also subbed 1/2 cup of Whole Wheat flour. Good texture and flavor. Kids loved them! (Doubling recipe yielded even better result.)
