When I was... | By Wyse Guide | Merry Christmas you know I love Christmas I love bringing you into my home on the farm and doing all these fun different cookies and candies and decorating but Christmas isn't just about the cookies or the candy big part of it it's also about the checks mix what is it you just have to have that party mix growing up mom always made party mix often she'd actually somehow make it in the microwave but we also did it in the oven all the time that's usually what we do now I love party mix I love that you can change it up this is kind of a little bit of an updated classic honestly it's the way I love to make it and the main differences are of the things I put into it because it's all about those extras and the little differences in cereals and the that make it so good and just like grabable and also the flavoring so I like to brown my butter why I'm obsessed with brown butter it has nutty notes not really butter scotchy but just like deeper flavors so good and some fresh herbs so it just has the best of everything it has those herbal notes and just so good so to start we want to brown the butter to do that I'm going to add my butter to a small skillet while it's do that. I'm also going to add sprig of rosemary, leaving it on the sprig because I really just wanted to infuse that butter. So, as it melts, as it cooks, it's really going to kind of go into it and then some fresh thyme. Don't want to overdo it. Just a couple small sprigs, the stems. Don't need to take off all the little, just going to do that. We're going to let it melt and then start browning. So, we're going to put it on low heat. You don't want to force it because then it could burn the bottom before it really just melts and starts to brown. So, we're going to let that slow melt while it's going. Let's talk about the good stuff. I mean, the butter is like the good stuff but I always do corn checks. Now, a lot of time you're going to see it with corn and rice checks. Rice checks are not near as sturdy. I like the sturdiness of corn. I only do corn. I feel like my grandma was the queen of Party Mix. She would always make party mix and keep it exactly as she always did. I kind of update mine but she always put wheat checks in it. I love that wheat cereal and it is so has a little bit more more sturdy again. Obviously, it has kind of a wheaty flavor too and I just like that. Along with that, you're going to notice in here. Oat Squares. I love oat Squares. They're one, they were my favorite cereal and they kind of have a maple leaf sweet flavor. Love that. I love the sweet, salty play here and these just kind of like are delicious. I love to put it in there. These are one of my sister and I's favorites. My mom would always put those in and then, grandma love pretzels and we do tons of stick pretzels. I wasn't ever the biggest pretzels fan. So, I like to mix pretzels, sesame sticks but if you can find them, garlic sesame sticks, just added flavor, why not? And then, grandma always do those fishies, those fishy crackers and always Parmesan flavored because the Parmesan is kind of neutral so it can really soak in all these other flavors and put that in there. I mean, look at all that good, good stuff. It's just and what's what's fun? You can make this however you want it and what your family loves. For a while, I didn't even pretzels but reverting back a little bit to nostalgia putting some pretzels in the nuts grandma mom only peanuts I love peanuts don't get me wrong but to kind of class it up we're getting classy in here folks we are adding I like mixed nuts and I like the fancy big ones I think you know especially on the holidays especially around Christmas having that extra little just like added touch is just fun it's really festive maybe not this year but usually you're going to have lots of people over and you're going to have bowls of this around your house maybe during a big family gathering or one of your Christmas parties so it's just nice to add some things that kind of elevate it, make it seem different than the usual year-round type. So, that's all mixed together. My butter you can see is starting to melt. As it's melting, I'm just going to make sure those herbs are right there in the butter. We're going to keep letting this melt and then we're going to let it brown and I'll show you that step and then we're just going to move on. So you can see the butter is really starting to cook. This is what always happens at first. Starts foaming and cooking. What I love is when it's cooking and bubbling, it's really cooking those herbs. So it's starting to draw out those essential oils in them which I can smell and I love that so you're getting that good buttery herby smell. There's nothing wrong with that. I'm going to keep letting it work and you keep letting it cook until all at once you kind of notice the sound of the bubbling fades away a little bit. The foaming starts to subside and you start seeing these brown edges and brown bottom. So I'll show you when it's done but just kind of getting a low heat so it just slowly, evenly cooks. I'm turning the burner off because you can see now the bubbling has subsided and around the edges here you see all these brown beautiful bits and you smell it like if you were here which I'm sorry you're here but just not like here you would smell this nuttiness that's what I love that's the brown butter that's doing its magic so the herbs I can smell them so well I'm not going to say throw them out yet I'm going to actually just set them over in here for a second because we're going to now flavor this even further it's kind of the fun part so into that We're putting some Worcestershire sauce. How do you say? I'm sure I'm going to get comments saying that's not how you say it. I say Worcestershire. Worcestershire. Worcestershire. It's Worcestershire. I say it right. So we're going to put it in that which it just gives you that instant flavor that you I think it's iconic with any party mix. So I'm going to throw that in there. Now, because we brown the butter, we're getting that reaction. It's totally fine. To that I'm going to add again these are ones I feel like they're under utilized anymore it's garlic powder and onion powder I growing up that's all we used and that's still all I use because it just has that perfect flavor I don't know if you're like me I feel like it's so bizarre how they are one of the only ones for some reason no matter how new they are or old they cake up so bad and I hate that about them but anyway we're going to also add in the onion powder and I the reason I really do like the powders here they add such a good kick without it being overpowering because a wise, you just don't even really notice it. Putting those in and then, seasoned salt. I mean, it's a thing you guys and you have to put it in there and it's just good and you need that salty kick and it has those other flavors. You just put it in. It smells good. It really does. The herbs don't overpower it and that's what I like. They just enough kind of add some flavor. I'm just stirring that in, making sure everything is kind of worked in 'cuz sometimes those spices want to powder up but since they are powdery, they kind of clump up and you kind of want to just make sure they're getting mixed in so these are herbs. I set them over here. They're cooked actually slightly but just so they infuse a little bit further. Do you see how they just flake off? You see that? I can just flake them off just to show you. I'm going to flake that off right into here. You can kind of just crunch it up which I like. You can kind of just break it right up into there. I'm going to do the same with the thyme. Oh yeah. It become you pretty much kind of frying it. So if you ever have like fried sage or something like that it's that same idea. I'm just going to mix it that herb in there. I love I do. I love the smell of that. So, now what we're going to do, my grandma was always so careful with this part. She would slowly pour over some of it 'cuz if you just dump all this in, cereal, what does it do? It's porous. It soaks in what you're putting on. So, if you just dump it all in, it's going to really soak in strongly to some of it and not get throughout. So, I drizzle a little bit on. I stir it really well and I'm going to drizzle some more on and then, keep stirring and drizzling because that's how you make sure to get a good even coating on all of it as opposed to just a couple of the sections 'cuz no, no, no, no, no. When people come over when I give this away I want everyone to flavor and taste it and really have a good good experience that's the point so I'm going to keep drizzling I'm going to keep stirring and then we're going to put it in the oven I'm finishing up with the last of the drizzle. It's well coated. That's the point. I stir it up really well because you just really want to make sure it's getting worked on there getting stirred in. Guys, it smells, it smells so good. I love that. So, I'm going to just divide it between two baking sheets. I put parchment on 'em just to keep 'em a little bit cleaner. Help it a little bit and kind of try to divide up evenly. The point is if you stack it too much, they don't evenly toast. Instead, they kind of just toast on the top and so I'm going to spread them out and then we're going to put them into a low oven. I keep it in there for an hour and I stir it oh maybe about every 15 minutes if you don't quite hit it one time it's not a huge deal so we're going to pop it into the oven we're going to stir it every so often the house is going to smell amazing it feels Christmasy that is what I love about this time of year and then we'll have delicious party food So every so often we need to take them out and I always switch racks when I put them back too but you just want to stir it around because you know they still kind of stack on top of each other and you want to make sure that they're evenly toasty so we're just going to mix it kind of bring those edges into the middle stir it over a little bit put them back out it's it's nothing it's not rocket science here but just nicely move it and stir it and then pop them back in the oven little bit more will be done. Guys, it already smells amazing and then we can eat. Well, they really should cool down but you know what I mean. Here it is. They have toasted. They have roasted. They have been stirred and you can't really tell a huge difference. The color maybe changes slightly. Right when they come out and they're still hot and warm. They're a little bit soft but now as they cool off, come to room temperature. They get that nice crispiness to them but the smell already you guys. It is amazing. Um my favorite, the Oat Square. Little hot but worth it. It's that it's that herby, buttery, sweet, salty. The Oat Squares have a little bit of sweetness. So, it's what I love. It's kind of the nostalgia of the classic thing mom and grandma always made but just slightly different. Little bit, little bit newer and I love it. It's just like, it's the flavor of the season and the smell of the season. It's perfect to share around. It's perfect to give as gifts. It's perfect just to have for yourself, for your family. That's what I love about this. It's a large quantity.
