CARAMELISED ONION + BROWN BUTTER PASTA 🤤
1. Heat olive oil and 2 tbsp butter in a pan. Add sliced onions with salt and cook on medium heat for about 20 minutes, stirring regularly until caramelized. 2. Mince garlic and chop sundried tomatoes. Add both to the onions, sauté for 1-2 minutes. 3. Cook pasta in salted water until al dente. Reserve pasta water. 4. Add cream and nutritional yeast to the onion mixture, stirring well. 5. Combine the cooked pasta with the sauce, adding a ladle of pasta water. 6. Toss, garnish with parsley, and drizzle with chili oil. Enjoy!

Ingredients: - 1 large onion - 2 large ripe tomatoes - 4 to 5 spicy chilies (optional) - 3 eggs - @ndcmuscat olive oil - liquid cheese - salt & pepper - 1 tsp cumin powder - 1 tsp coriander powder - 1 tsp paprika - 1 tbsp tomato puree - start by chopping the veggies. Saute the onion in a drizzle of olive oil. - once the onion starts to brown add the tomatoes. Season with salt. Pepper. Cumin. Coriander. Paprika. Tomato puree and any spices that you prefer. - keep cooking the tomatoes on medium low till dissolved. - switch off the heat then crack the eggs in the mixture. Mix it thoroughly and add a splash of water. - turn the heat back on low and spread the cheese on top. - cover and let it cook for 3-5 minutes. - garnish. Serve with bread and enjoy. @chefjjskitchen
