I used Swerve in the crust and topping, but used 9 drops liquid EZ-Sweetz with the blue cap (that one is double strength) in the filling.  I can get that "cooling effect" with Swerve.  I did not with this coffee cake!

Divide between 6 muffin top pans and press to make flat rounds. Bake at 350 about 10-12 minutes until golden brown.
