I know there’s a few different ways you can prep a wedge, but this is the method I’ve been using for longer than I care to think about 😅 A quick parboil helps draw out the starch & keep them fluffy in the centre, whilst also cutting the baking time so the Parmesan doesn’t burn. Allowing them to steam dry will help the moisture escape and prevent them from turning soggy.
