Tres Leches Cake - Keto, Low Carb, Gluten-Free, THM S
If you are celebrating Cinco de Mayo this week my Tres Leches Cake should be on your menu! It is gluten/grain/sugar free, low carb, and a THM S. The first time I tried Tres Leches Cake at a Cuban restaurant I fell in love. A sponge cake soaked with sweetened milk and topped with whipped cream? It sounded like a dream to me and it tasted like one too.
Oh my goodness! I finally made the Trimtastic zucchini cake into a yellow cake using a yellow squash! It tastes just like yellow cake! See my adjustments to the cake recipe below: 1) Omit cocoa powder and chocolate chips. 2) Use yellow squash instead of zucchini. 3) Add additional 1/4 cup of baking blend. 4) Add an additional 1/2-1 tsp vanilla 5) 1/2 tsp almond extract (or use other flavors) Baked in 8x8 pan at 350° for 30 minutes.
