*Absolutely the best gluten free pancake recipe I have ever tried. *I have made these twice now and I followed the recipe almost exactly (didn't have stevia on hand) *I also discovered through my own airheadedness that if you forget to put in the coconut oil and cinnamon, the cakes will still cook up nice and fluffy (in a non-stick skillet) and you'll end up with a cake that's not quite as sweet and almost bread-like. * I made a double batch and froze for quick weekday breakfasts.
