20min · 5 servings The full recipe is now in my new cookbook Memories on a Plate. 1 small sweet potato baked and mashed • 1 1/4 cup of yellow cornmeal • 1/2 cup of Miss Lena’s Sweet Potato Biscuit Mix (order from my website) • 1/2 teaspoon of salt • 2 Tablespoons of honey • 1/2 cup buttermilk • 1 egg • 1/2 cup of cubed ham, optional • 2 scallion, finely chopped, optional In a large bowl, add cornmeal and 1/2 cup of Miss Lena’s Sweet Potato Biscuit Mix, and salt and whisk well until fully combined. In another bowl, add buttermilk, honey, mashed sweet potato and egg and whisk to combine. Add wet ingredients to the dry ingredients and mix well.
