Szarlotka, otherwise known as Polish Apple Cake, is a dessert my paternal grandmother (babcia) used to make. Not only did my babcia make a delicious szarlotka, she was an amazing lady who was a big part of the Polish resistance against the Germans in WWII. Unfortunately she passed away many years ago and I never had a chance to get her recipe. Over time I’ve made several szarlotkas, experimenting to make one similar to what she made. I think babcia would be very proud of this one!

Pączki

Pączki - Polish donuts, deep-fried and filled with jam. Smothered in light icing or powder sugar. Best thing on earth!

Pączki - although they look like berliners, bismarcks, and jelly doughnuts, pączki are made from especially rich dough containing eggs, fats, sugar and sometimes milk. They feature a variety of fruit and creme fillings and can be glazed, or covered with granulated or powdered sugar. Powidła (stewed plum jam) and wild rose hip jam are traditional fillings, but many others are used as well, including strawberry, Bavarian cream, blueberry, custard, raspberry and apple.

Somewhat akin to filled, deep-fried doughnuts, pączki are a fabulous Polish treat that well worth trying if you ever get the chance. >> I'm a HUGE fan of doughnuts
