Place the parchment on top of the potatoes again, flip it onto a cutting board. Add flaky sea salt. Cut into triangles and transfer to a plate. Pour batter into the baking pan and spread into a thin even layer. Sprinkle extra corn meal and pine nuts on top followed by a drizzle extra olive oil (1 tbsp) and bake for 35 min until set, golden and crispy. Remove from oven and let it cool for 15 min. Then garnish with basil leaves and extra grated Parmesan and slice it up. Serve with a salad on the side for a complete meal or just as is as a gut friendly snackTip: leftovers can be stored in an airtight container in the fridge for up to 4 days.
